Sauted Scallops

26 Oct

Scallops are quick and easy to cook. I cook them often and put them on top of a salad or serve them with whole wheat pasta and marinara  sauce.

  • 6-8 sea scallops per person
  • salt and pepper
  • olive oil
  • lemon half

dry the scallops; coat the skillet with olive oil and heat it on high heat; place the seasoned scallops in skillet and cook each side    2 1/2-3 minutes. Do not over cook them. Squeeze the juice from the lemon over the scallops.

Slow cooked oatmeal

20 Oct

It is getting colder outside and this oatmeal is ready  to warm you up when you get up. I have a small slow cooker that I bought for $10 and it is perfect for small dish like this.

For one person:

  • 1 cup old fashion oats (gluten free)
  • 1 1/4 water
  • salt

cook over night on slow temp

stir in cinnamon and raisins or cranberries or nuts

Hope it will give you a lot of horse power to get through your day.

Baked Pears

Baked Pears

This is easy dessert:

Cut ripe pears in half and core them.

Sprinkle the pears with nutmeg, ginger cloves and cinnamon.

Bake them in oven for 45 minutes. I put them in oven with what ever I happen to be baking that evening.

We eat them without any topping, but they are also excellent with frozen yogurt or low fat ice cream.

Pears are in season now, so give this a try.

Goal of this blog is to help anyone cook easy healthy recipes. Food and fitness are my passions. I enjoy healthy and tasty foods, but don’t want to spend hours in the kitchen. Seafood scares home cooks, but my recipes are simple. Hope you will enjoy this site and the recipes I will share with you.
