Roasted Beet and Mango Salad

I made this salad to go with our Christmas eve meal and it was very refreshing. I am planning on making it one day with shrimp as a dinner entree.

  • 2 large beets washed and trimmed
  • 1/4 cup orange juice
  • 2 tbs lemon juice
  • 1/4 tsp fresh ground black pepper
  • 1 tbs dijon mustard
  • 2 tsp olive oil
  • 6 cups greens or baby spinach
  • 1 cup diced peeled ripe mango
Preheat oven 400 degrees. Wrap the beets in foil and drizzle them with olive oil. Place the wrapped beets in a baking dish and bake an hour or until tender. Cool the beets. This can be done few days a head. Peel and slice the beets.
Mix the juices and the spices together. Toss the dressing and the greens together. Divide salad evenly among plates, and top with the beets and the mango.
