Mandarine Orange and Soy Bean Salad

We eat a lot of salads and I try to come up with different ingredients to change up a salad.

For the salad:

  • 1 small can of mandarin orange segments
  • cherry tomatoes
  • shelled cooked soy beans

For the dressing:

  • 1/4 cup orange muscat champagne vinegar
  • 1 tbs white wine
  • 1 tbs dijon mustard
  • 1 tbs olive oil
  • fresh ground pepper

Mix the dressing ingredients well together. Drizzle over the salad.
