Chocolate Fudge Cake

This recipe is dedicated to my Valentine. I love you and I want to keep your heart healthy with this chocolate dessert.

  • 1/2 cup light soy milk or almond milk
  • 2 tbs canola oil
  • 2 tsp vanilla
  • 3/4 cup whole wheat flour
  • 1/2 cup truvia
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup oats
  • 1/4 cup unsweetened cocoa powder
  • 1 3/4 cup boiling water

Preheat oven to 350 degrees. Mix the milk, oil an 1 tsp of vanilla together. In a large mixing bowl, mix the flour,  1/4 cup of truvia, baking powder and salt together. Add the milk mixture to dry ingredients, stirring with fork until blended. Mix in oats.

Combine 1/4 cup of trivia, 1 tsp of vanilla and cocoa with the boiling water. Mix well to dissolve the cocoa. Pour into 8 inch square baking dish. Spoon batter on top in large spoonfuls. Bake 40 minutes or until top is crisp and sauce on bottom is bubbly. Let stand about 10 minutes. Serve warm. You can top it of with vanilla nonfat frozen or greek yogurt.
