Cod with Ratatouille

When you are in mood for Italian flavored seafood dish, this is a winner. It takes a little bit longer than my normal 20 minute meals, but it is still easy to make.

  • 1 small egg plant, cut into 1 inch pieces
  • 3 medium zucchini, cut into 1 inch pieces
  • 1/2 onion chopped
  • 3 gloves of garlic pressed
  •  1 tbs basil
  • 1 tbs parsley
  • salt and pepper
  • 1 1/2 pounds of cod or other white fish cup up in 1 inch pieces
  • jar of prepared marinara sauce

Heat oven to 450 degrees. Toss the vegetables and onion with 2 tbs of olive oil and the spices. Place the vegetable mixture in a casserole dish. Roast in the oven for about 20 minutes stirring once or twice.  Add the marinara sauce and return the dish in to the oven. After 5 minutes, add the fish, cook about 10 minutes or until fish is done. Do not over cook. Serve with spaghetti squash or whole wheat  pasta.
