Miso Glazed Salmon

I think miso glaze is my very favorite glaze. Miso is the elegant Japanese term for fermented soybean paste. Miso paste is high in salt so don’t add any salt to miso recipes. However it is high in protein and rich in vitamins and minerals.

  • salmon filet 1/2 pound per person
  • 1/4 cup honey
  • 1/4 cup white miso paste
  • 2 tbs orange juice
  • 1 tbs rice vinegar
  • 2 tsp low sodium soy sauce

Preheat the broiler. Mix together all the ingredients for the sauce. Place the salmon in a broiler safe dish and cover the fish with the glaze. Broil 5 minutes, use a pastry brush to baste the fish with the reduced glaze from the bottom of the dish. Bake 5-7  minutes more or until fish is flaky and glaze is caramelized.
