Spicy White Fish

I have had a lot of fun trying different fish recipes with the fish that my fishermen caught. My favorite sushi chef gave me an idea for this recipe. I added few ingredients to his suggestion and came up with a winner. I used amberjack for this recipe, but you can use any firm white fish.

Mix the following together for the marinate and pasting:

  • 1 tbs low sodium soy sauce (use gluten free if needed)
  • 3 tbs rice vinegar
  • 1/4 tsp sciracha sauce or other hot sauce (from Oriental store)
  • 1/4 tsp red pepper flakes
  • 3 tbs lemon juice
  • 1 tbs orange juice
  • 1 tsp chopped fresh ginger
  • 1 scallion sliced
  • 1 pound of white fish fillets

Place the fish in a bag with the marinate and let marinate for 20 minutes turning the bag over few times.

Heat a skillet on medium heat. Add olive oil and heat for few seconds. Add the fish to the skillet. Paste after a minute. Cook 2-3 minutes. Flip the fish over and paste and cook for an other 2-3 minutes or until fish is flaky. Do not over cook. Plate the fish and top with the scallion.

It paired well with salad with ginger dressing.
