Low Fat Peanut Butter Cheesecake

Most everyone loves sweets. Many of us are wanting to start the new year by eating healthier and loosing weight. This recipe will allow you to have that occasional treat quilt free. I am not saying you can eat the whole thing and expect to fit in those skinny jeans, but this will keep you from blowing your diet on something totally sinful. I tested this on two friends who are not on diet and   they liked it enough to have seconds.

  • 1 cup graham cracker crumbs
  • 2 tbs melted butter
  • 2 (8 oz) packages of fat-free cream cheese (room temperature)
  • 1 (4 oz) can of fat free sweetened condensed milk
  • 1/4 cup egg substitute
  • 1/3 cup lemon juice
  • 1 tsp vanilla extract
  • 2 tbs flour
  • 1 cup of natural peanut butter (no sugar added)

Mix graham cracker crumbs and butter well. Press evenly in greased 9 x 9 square pan. Beat cream cheese with electric mixer. Gradually add the condensed milk, egg substitute, lemon juice, vanilla and flour. Mix well. Pour over graham cracker crust. Drop peanut butter by small spoonfuls over surface of filling. With a knife, swirl peanut butter  gently through filling to create marble  effect. Bake in 350 degree oven for 25 minutes or until center is set. Cool and chill.
