Gluten Free Pie Crust

It is very difficult to find all ready made pie crust that are gluten free. I feel for the people who must eat gluten free for health reasons. We try to do it as a choice, and I get frustrated as I try to find pre-made things. I experienced tonight with this idea. If you try it please let me know what you think. I am used to almond butter, so to me it tasted good, but I would love to hear other opinions.

  • 1/2 cup oat bran
  • 1/2 cup pure almond butter
  • 2 tbs honey

Mix all of the ingredients together in a food processor. Press into a pie pan. Bake in 325 F degree oven for 10 minutes. Cool completely before using.

Grilled Salmon with Herbs and Spices

My husband and I love Eastern Mediterranean food. This recipe has some different seasoning one typically does not pair with salmon. I wanted to play around with seasoning tonight and to my delight it turned out a success.

  • 1/2 tube of Italian herbs spices 
  • juice and rind of 1 lemon
  • 3 cloves of garlic, crushed
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • black pepper
  • boneless salmon fillet
  • soaked cedar blank

Mix all of the seasonings together. Rub marinade on the flesh side of the salmon. Place the salmon on the cedar blank. Grill 10-15 minutes on medium high heat.

Oat Bran Muffins with Cranberries and Carrots

I have been on a mission to create healthier breakfast options. Carbohydrates for breakfast is not my favorite thing, but I have to have some quick options for my husband and muffins are easy option. Therefore, the muffins I bake must be filled with nutrition. These muffins have cranberries, which are antioxidant packed.  Carrots have betacarotene, which is believed to reduce the risk of heart disease. The yogurt and milk add protein and calcium. Orange juice adds sweetness and of course  has vitamin C.  But my favorite ingredient is oat bran. Oat bran has been found to lower cholesterol levels when added to diet. These muffins are absolutely delicious.

Mix together in a small bowl:

  • 1/ 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground cardamon
  • 1/2 tsp salt

Mix together in a large bowl:

  • 1 1/2 cup oat bran
  • 1/2 cup brown sugar
  • 1/3 cup egg whites
  • 6 oz container of fat-free Greek yogurt
  • 1/4 cup orange juice
  • 1/2 cup fat free milk
  • 1 tsp orange zest
  • 2 cups grated carrots
  • 1 1/4 cup low sugar dried cranberries

Stir the flour mixture into the wet ingredients Divide batter among muffin cups. Top with the 1/2 cup of cranberries. Bake in 375 degree oven 11-15 minutes. Cool and unfold.

Blueberry Bran Muffins

Blueberries have been so delicious here in Florida. I try to make different healthy breakfast options for my husband, and these muffins are wonderful and healthy. They stay fresh in the fridge for several days and are easy to grab and go on a busy morning.

  • 1 1/2 cups wheat bran flakes (crushed to 3/4 cup)
  • 1/3 cup fat-free milk
  • 1/4 cup egg whites
  • 1/2 cup packed brown sugar
  • pint of fresh blueberries

Mix all the above ingredients together in a large bowl. Let stand 5 minutes.

  • 1 1/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt

Mix the above ingredients together. Add to the bran flake mixture. Fold together.

Portion evenly into muffin-pan cups coated with cooking spray. Bake at 375 F oven about 12-15 minutes. Serve warm or cool.

Lobster Wraps

The local supermarket had lobster on sale on a perfect time. It is our son’s birthday. I wanted to surprise him at lunch and made lobster wraps for him. He loves lobster and spicy food. My creation turned out delicious and not too spicy. I used whole grain flat bread rather than the traditional buns and yogurt in place of mayonnaise  to keep it healthier.

  • whole grain wraps
  • mixed greens
  • 1 1/2 pounds cooked lobster
  • 3 tbs fat free creek yogurt
  • 1 tbs lemon juice
  •  1 tsp sriracha or other hot sauce
  • 2 green onions, chopped
  • pepper

Chop the lobster into small cubes. In a bowl mix together all of the ingredients except  the lobster. Add the lobster. Lay mixed greens on a wrap, top with the lobster mix.
