Blueberry Bran Muffins

Blueberries have been so delicious here in Florida. I try to make different healthy breakfast options for my husband, and these muffins are wonderful and healthy. They stay fresh in the fridge for several days and are easy to grab and go on a busy morning.

  • 1 1/2 cups wheat bran flakes (crushed to 3/4 cup)
  • 1/3 cup fat-free milk
  • 1/4 cup egg whites
  • 1/2 cup packed brown sugar
  • pint of fresh blueberries

Mix all the above ingredients together in a large bowl. Let stand 5 minutes.

  • 1 1/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt

Mix the above ingredients together. Add to the bran flake mixture. Fold together.

Portion evenly into muffin-pan cups coated with cooking spray. Bake at 375 F oven about 12-15 minutes. Serve warm or cool.
