Maple Mahi Mahi

I went fishing with my husband and son and caught Mahi Mahi. It was a wonderful day of fishing, but the best part is trying different recipe ideas and eating the wonderful fish. I tried this easy idea the night we came home. It was easy, quick and delicious.

  • 1 lb  mahi mahi fillets
  • 1/8 cup maple syrup
  • 1/2 tsp cajun seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • salt and pepper

Mix all of the seasoning  ingredients together. Heat a skillet on medium heat. Brush the seasoning on both sides of the fish. Cook 2-3 minutes each side or until the fish flakes. Do not over cook.




Roasted Spiral Sweet Potatoes

Sweet potatoes are very popular in health circles. Compared to white potatoes they have more fiber and cause the blood sugar to rise more gradually than white potatoes. Sweet potatoes are also a rich source of vitamin A and betacarotene. Usually I make baked sweet potato chips or fries, so I decided to try to cook them a different way, and came up with this idea. I especially loved the way it looked on the plate.

  • sweet potatoes peeled and sliced like an accordion (don’t cut through) 
  • 3 tbs olive oil
  • 1 tsp paprika
  • 1 tsp ground red pepper
  • dash of salt

Whisk the seasoning together. Drizzle the potatoes with most of the oil mix. Bake in 400 degree oven 40 minutes. Drizzle with the remaining oil mixture.

Grilled Smoked Almond Salmon

This marinate gives the salmon sweet and smokey flavor. For the spice lovers, I might through in some red pepper flakes in to the mix.  I grilled pineapple with the fish and it was excellent pairing.

  • salmon fillet
  • 1/4 cup crushed almonds
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 3 gloves of garlic, pressed
  • 1/4 cup maple syrup
  • 1 tbs low sodium gluten free soy sauce

Mix the crushed almonds and rest of the seasoning. Place in a zip-lock bag. Put the salmon in the bag, shake to evenly coat salmon. Marinate in the fridge 10-15 minutes, skin side down. Heat the grill medium high. Place the salmon on foil. Grill about 1o minutes. Meanwhile cook rest of the marinate 2 minutes. Plate the salmon, pour the sauce over the fish.
