Grilled Pineapple and Fish Kabobs

We caught quite a few amber jacks on our fishing trip. For this recipe you can use any firm fish, even tuna.

  • 2 tbs olive oil
  • 1 tbs lemon juice
  • 1 tsp fresh chopped ginger
  • 1 tbs gluten free low sodium soy sauce
  • 2 tsp honey
  • 1 glove of garlic pressed
  • fresh ground pepper
  • 1 lb of firm fish cubed
  • pineapple cut in chunks

Combine the seasoning together. Thread pineapple and the fish onto skewers. Grill on medium heat 7-10 minutes brushing with the marinate and turning over.
