Seafood Medley with Blistered Tomatoes

Tomatoes cooked low and slow with garlic are amped up with flavor. I had at a restaurant octopus cooked in a pan with blistered tomatoes, and thought I would experiment little. I had frozen seafood medley and prepared them in similar way. I truly enjoyed this, and I hope to test it one day with fresh octopus only.

  • 1/4 cup olive oil
  • 2 pounds cherry tomatoes
  • 2 cloves of garlic, pressed
  • salt and pepper
  • 1 pound of seafood medley
  • 1 tsp of capers, drained
  • 1 1/2 tbs white wine vinegar
  • 1/2 cup fresh basil, coarsely cup

In a large skillet, heat the olive oil. Add the tomatoes, garlic and salt and pepper. Cook over medium heat until tomatoes start to blister. Stir in the seafood medley and the capers. Cook about 5 minutes. Add the vinegar and basil. Taste; season with salt and pepper if needed.
