Broiled Orange Marmalade and Mustard Salmon

Orange Marmalade is very popular in Europe. The other day I was at grocery store with a friend and she was wanting to make one of my salmon dishes that calls for fresh oranges, but it takes little longer to make.  I asked if she had any marmalade.  I did little recipe surging and got a idea for this with my personal modifications. Both of our husbands liked the final result, and the best part was that its easy and quick. I was able to make this with one arm easily and even have left over seasoning mix for an other meal.

  • salmon filet
  • 1/2 cup marmalade
  • 1 1/2 tbs dijon mustard (gluten free)
  • 1/2 tsp powdered ginger
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • salt if desired

Preheat broiler on high
Combine mustard, marmalade, ginger, salt, pepper and garlic powder.
Place salmon in baking dish skin side down.
Brush the marmalade mixture over salmon, broil 8-10 minutes or until fish flakes easily.
