Healthy Waldorf Salad

It is a shame to eat a good fruit salad and have to worry about fat and calories. This Waldorf salad is delicious and truly healthy, the perfect salad for holiday gatherings. This healthy salad would be even wonderful main meal topped with some cooked chicken or turkey.

  • 1 cup plain fat free Greek yogurt
  • 1 tbs honey
  • 1/8 tsp pepper
  • 2 golden apples cut into small pieces
  • 2 red apples cut into small pieces
  • juice of 1 lemon
  • 3/4 cup of diced celery
  • 1 cup of grapes cut in halves

Mix the apples with the lemon juice. Add the celery and grapes to the apple mixture.  Blend together the yogurt, honey and the pepper. Stir the apple mix with the yogurt sauce. Chill until ready to serve.
