Salmon with Sun-dried Tomato and Capers

Here is an other quick dinner idea. You need only few ingredients and dinner will be on table in 30 minutes from the time you unload the groceries. Usually I enjoy spending more time in the kitchen, but since my kitchen is being remodeled I am using limited resources and try to focus on easy and simple. This was quick, and I truly loved the flavor. I will make this again in my newly remodeled kitchen in the future.

  • sun-dried tomatoes
  • capers
  • skinless salmon filet pieces

Place about 9×9 piece of foil for each individual serving of salmon on a counter. Place salmon on foil. Season each piece with pepper, top with 1/4 cup of tomatoes and 1 tsp of capers. No salt needed since the capers are salty. Fold foil packets closed and bake in 400 degree oven for 20 minutes.
