Oriental Salad with Teriyaki Chicken

This salad is delicious and easy to make. I made this calorie friendly by cuting down on sugar and omitted the noodles compared to the typical recipes for oriental salads. I served it with grilled teriyaki chicken for perfect lunch.

  • whole romaine lettuce, chopped
  • 5 green onions, chopped
  • 1/4 cup virgin olive oil
  • 1/3 cup sugar
  • 1/2 rice vinegar
  • 1/2 cup water
  • 1 tbs gluten free soy sauce
  • peeled mandarin oranges
  • 1/4 cup slivered almonds

In a small bowl combine the oil, sugar, vinegar, water and soy sauce. Combine the romaine lettuce and green onions in a large bowl. Toss the lettuce with a desired amount of dressing. Plate the lettuce. Top with almonds, mandarin orange slices and the chicken.
