Salmon Packets with Potatoes and Peas

One of the easiest ways to cook fish is in parchment or foil packets. It is a virtually fat free method of cooking and clean up is so easy. You can be as creative as you want. Firm fish like salmon, cod or bass work the best. It is best to slice all veggies thin so they cook enough and the fish stays moist.

  • skinless salmon filet pieces
  • small red potatoes, thinly sliced
  • frozen peas (1/4 cup for each packet)
  • olive oil
  • salt and pepper
  • fresh thyme
  • pesto

Cut parchment paper in large pieces, one for each packet. Season the fish fillet with fresh thyme, salt and pepper. Place on the parchment paper. Top the fish with the potato slices and peas. Drizzle with olive oil. Place the fish packets on a cookie sheet. Bake in 425 degree oven for 20 minutes. Watch out for the steam when you cut the packets open. Top the fish with spoonful of pesto.
