Watermelon “Pizza”

When you find something you like, you must recreate it! Well, at least thats my thoughts when I find a dish I find tasty and fascinating. When I saw watermelon pizza on a menu, I complete passed by it because I thought DOUGH! You don’t find dough on this pizza, only healthy tasty ingredients. This makes a great appetizer or a side dish. I love it with smoked salmon or shrimp coctail.

  • watermelon slices
  • pesto
  • sliced almonds
  • cherry tomatoes, halved
  • arugula
  • balsamic vinaigrette
  • chopped onion (optional)
  • feta cheese (optional)

Toss the aruguala in the vinaigrette. Spread 1 tsp of pesto on each slice of watermelon, add the sliced almonds, tomatoes, arugula and the optional onion and feta cheese.

Roasted Sweet Potatoes and Onion

Sweet potatoes are at the top of nearly everyone’s healthiest foods list.  Sweet potatoes contain vitamin A,  vitamin C, and some calcium, potassium, and iron too. All this at just 105 calories! My mother in law loves onions, so I decided to cook sweet potatoes with onions one evening when we had her over for dinner.  Hopefully I earned few brownie points with her!

  • 1 pound cubed peeled sweet potatoes
  • Cooking spray
  • 1 tablespoon olive oil
  •  salt
  • black pepper
  • 1/4 cup coarsely chopped onion

Place sweet potatoes and onions in a shallow roasting pan coated with cooking spray. Drizzle with oil. Sprinkle with salt and pepper; toss to coat. Bake at 325° for 40 minutes tossing few times during baking.

Roasted Onions

People usually either love or hate onions.  Seems like this time of the year everyone is fighting with a flu. When I was a kid my parents made hot milk with onions we had to drink when we had the flu. Well, I became one of those onion haters, but that does not mean that I won’t cook with onions or eat them in a dish. Tonight I had three onion lovers over for dinner and was happy to roast some onions for them. It was a winner side-dish according to my guests and husband.

  • small onions
  • olive oil
  • sea salt
  • pepper

Place the whole onions, skin on, in a baking dish coated with olive oil. Roast in 425 degree oven about 1 hour. Halve the onions and season with salt and pepper and drizzle with olive oil.
